The Season for Garlic
Fall is whispering in North Carolina 🍂.
And I’m getting my soil ready for an easy win: Garlic.
In my opinion…
Garlic feels like the perfect crop for fall
— simple, reliable, and zero chaos.
My kind of plant. đź§„ đź§„
Especially after a very hot and high-maintenance summer.
Last year was my first try at growing garlic.
Oof. It went alright.
🫣 Last year, I was just winging it.
But I’m back at it this year —
With a plan and notes to share.
This time, my plan includes:
âš« What garlic needs to grow well
âš« My planting plan
⚫ Garlic varieties I’ll plant

What Garlic Needs 🌱
Garlic’s botanical name is Allium sativum.
It’s part of the onion family.
The main things garlic wants:
âš« Full sun
âš« Rich, well-draining soil
âš« Steady water + nutrients
I’ll grow my garlic in raised beds or roomy pots (at least 12 inches deep). Raised beds and containers lets me build the right soil mix and balance their water needs.

Building the Right Soil Mix
Garlic likes rich soil.
So, mix compost or manure into the soil before planting.
And add a slow-release or organic fertilizer at planting time.
You can add more fertilizer again in early spring.
🚫🌿 And weeds?
Keep them out. Garlic doesn’t like competition.

âś… Potting soil goes in pots and containers.

— But perfect for in-ground planting!

Hardneck vs. Softneck Garlicđź§„
There are two main types of garlic:
HARDNECK
âš« Cold hardy (good for harsh winters)
âš« Grows a flower stalk in center of bulb (called a scape)
I’ve never done this before, but I read you harvest scapes when they curl. And it’s best to cut garlic scapes even if you won’t eat them — to grow bigger bulbs.
SOFTNECK
âš« Grows best in mild climates (like the South)
âš« No scapes
âš« Stores better than hardneck
This helps me know which one fits my climate best.

The Plan (Kinda)👩🏽‍🌾
I’ll buy seed garlic (a bulb of cloves) from:
âś… A local nursery
âś… Garden center
âś… Or specialty seller online
đźš« But never from a grocery store
One reason why? Grocery store garlic may be treated to prevent sprouting. That means it probably won’t grow in my garden.
When I’m ready to plant:
I’ll break the bulb apart.
Only the biggest cloves get planted.
Because big cloves = a better chance to grow bigger bulbs.
When planting:
⚠️ Don’t peel the white papery skin off.
⚠️ If it falls off, no worries. But don’t force it.
Planting steps:
âš« Pick a sunny spot.
âš« Space them a few inches apart.
âš« Push cloves no more than 2-3″ deep (roots down, pointy end up).
âš« Cover with soil (I’ll cover mine with an inch of soil).
⚠️ These are just general steps. Always check the label on your garlic for the specific instructions—because my notes don’t replace that!
I’ll plant garlic in the fall while the ground is still warm.
→ That’s usually 6–8 weeks before I have to worry about the ground freezing — aka our first frost and consistently cold weather.
→ I’ll plant 3 bulbs, which should give me plenty to harvest next summer.

The Garlic Varieties I’m Planting
This is the fun part!
Here’s what varieties I’ll try this season:
âš« Blanco Piancenza Garlic
âš« Inchelium Red Garlic
âš« Elephant Garlic (not a true garlic)
How long to harvest?
8-9 months.
I’ll plant my garlic in fall.
Then, harvest in late spring or summer.
How long before garlic shoots or leaves sprout?
I expect to see shoots within 8 weeks of planting.
If part of a clove grows up above the ground, it’s fine.
I’ll know it’s harvest-time when:
The older (lowest) leaves turn brown.
While the top leaves are still green.
đźš« Waiting until all the leaves brown is a NO.
đźš« Pulling garlic out by the leaves can damage it.
âś… Instead, gently move soil away and dig the bulb out.
After harvest, I’ll cure and store it —
But that’s a whole other blog post.

Gentle Notes to Self
⚫ Pick a variety — try it, repeat it (or not).
⚫ Don’t forget to water when it’s dry.
âš« Mulch helps garlic stay cozy through winter.
âš« Fall planting = summer harvest. Be patient.
⚫ Gardening doesn’t have to be perfect to be fun.

I’ll tuck my garlic in the ground between September and October.
Hopefully things go as planned.
But if they don’t?
I’ll learn.
I’ll adjust.
I’ll keep going.
